We left the Green Mountain state and drove south and west through western MA and into NY. We ventured into the Catskill Mountains and camped at Woodland Valley near Phoenicia, NY. I'm pretty sure that Michael Myers lives in the area. We were literally the only people camping there. I mean, it was nice to have the place to ourselves, we were camped along a river and right along side the trail head, but still.. we were quite alone. The foliage here was also beautiful but different, more yellows in color and mostly beech and birch trees.
We rode our bikes into Phoenicia for an afternoon and had a nice lunch. The rain came in the next day and ruined our hiking plans but we decided to take a short drive over to Woodstock, NY. It was our 3 year anniversary. Woodstock is about a town over from where the epic concert happened and it was still lingering with hippies, probably the same ones from that concert who never left. Overall it was a low-key day for us but we did find an amazing hardware store and Brian being a retired hardware store employee was overly impressed.
We we came home to a roast in the oven and Brian's favorite dessert.. apple crisp. The night before we cooked an entire meal on the grill and in tin foil, a recipe from a cook book my dear friend, Kerri gave us for the trip. Recipe below..
Hobo Chicken
1 onion, thinly sliced
2 medium potatoes, thinly sliced
2 medium carrots, thinly sliced
3 T. butter
4 boneless chicken breast halves
1 (8 oz.) can whole kernel corn drained
1/2 tsp. dried thyme
1/2 tsp. dried rosemary
1 tsp. salt
1/4 tsp. pepper
Spray heavy duty foil with nonstick veg. spray. Arrange sliced onions in the center of the foil. Set the sliced potatoes and carrots on top of the onions. Scatter pieces of butter over vegetables. Arrange the chicken breast halves on top of the vegetables, overlapping edges as needed. Pour drained corn on and around chicken. Sprinkle thyme, rosemary, salt and pepper on top. Wrap foil in a tent pack. Place foil pack on the grill over indirect heat, close lid and cook for 30-40 minutes.
